Mmmmm, you can just smell that bacon, can’t you? Yeah, you want that bacon, don’t you?
This Brussels Sprout Bacon Kimchi Fried Rice is a perfect one pot meal that can be made quickly and is everything hearty, warm, and satisfying especially after a long day of work.
It can be whipped up in 10 minutes and takes only 6 ingredients to make.
Brussels sprouts and bacon are a match made in heaven. Bacon and kimchi go together like peanut butter and jelly. So….the combination of all three just had to taste good, right? Yup, I was soooo right!
I start with thick slices of bacon from my deli. Cut them into 1 inch pieces and fry them up in your wok or cast iron skillet. Add the thinly shaved brussels sprouts right on top and all that fatty bacon goodness soaks right in. Don’t forget to add in the bold, red kimchi! Top it off with rice and voila, a warm and hearty one pot meal that’s chock full o’yumminess. If you can wait that extra 4 minutes, fry up a sunny side egg , you won’t regret it.
So, let me tell you about how this dish came to be. Last week, we splurged on ourselves and had a date night in the city on a weeknight! In our world, that’s a big deal! Our Philly restaurant list to visit just got a little shorter with our night out at Vedge! Now, I can go on and on about our amazing vegan meal. First off, I am not vegan or vegetarian (as you may have noticed in the title!) and I LOVED EVERYTHING we ate, especially our side order of brussels sprouts. The brussels came shaved and grilled and tasted smokey and buttery and bacon-y without the bacon or butter! This was the inspiration for my Brussels Sprout Bacon Kimchi Fried Rice. Bottom line, if you live in Philly definitely make an effort to go to Vedge, it’s an eye opening experience!

- 2 cups shredded Brussels Sprouts
- 2 Bacon strips, cut in 1 inch pieces
- 1 cup Kimchi, sliced matchstick thin
- 1 tsp sesame oil
- 2 Tbsp soy sauce
- 1-1½ cup cooked rice
- 2 eggs, fried (optional)
- Place cut bacon directly into Wok or cast iron skillet, no additional oil necessary. Let bacon brown on both sides (3-4 minutes)
- Add Brussels sprouts directly to bacon, stir occasionally for 2-3 minutes
- Add sesame oil
- Add Kimchi and saute for 1 minute
- Add soy sauce and Rice
- Mix well
- Garnish with fried egg and scallions (optional)
